Why Settle for the Beer Equivalent of Wonder Bread?

Harvest Time approaches and with it a bounty of grains. And yet, while a growing interest in whole grains has brought us artisanal loaves studded with toothsome kernels, our beer has rarely benefited from the spelt, millet, buckwheat and more obscure heirloom varieties on offer. Brewers have, by and large, stuck to barley.

Recently, however, a new wave of craft beers brewed from rarer stuff has arrived. Creative brewers are seeking flavor in alternative grains and turning small farmers’ diverse output into beers full of character.
